Welcome back to our little part of the world. Would you like to try the cupcake dandelion recipe? They were delicious!
Dandelion Cupcakes Ingredients
▢ 1½ cup all-purpose flour
▢ ¼ tsp baking soda
▢ ½ tsp baking powder
▢ ¼ tsp salt
▢ 3/4 cup melted butter
▢ 1/4 cup sugar
▢ ½ cup honey
▢ 3 large eggs
▢ ½ cup milk
▢ 1 lemon zested
▢ ¾ cup dandelion petals
Dandelion Cupcakes
Preheat the oven (176° C)
Line a 12 muffin tin with baking cups.
In a medium bowl, combine the flour, baking powder, baking soda, and salt.
Whisk the melted butter and sugar together. Add in the honey and mix until fully incorporated.
Add in the eggs one at a time.
Add the milk.
Add in the lemon zest and dandelion petals, making sure they are evenly incorporated and aren’t clumped together.
Fill each lined muffin tin with ¼ cup of the batter and bake for about 20 minutes, or until a toothpick inserted in the middle comes out clean.
Allow the cupcakes to cool in the pan for 15 minutes.
While the cupcakes cool, prepare the easy frosting.
Lemon Buttercream Frosting Ingredients
1/2 cup of cream cheese. I used the French brand Madame Loik.
1/2 cup melted butter
1 lemon zested and juiced
A pinch salt
1 cup white sugar, I may have used less, I usually just measure with my eyes.
1 TBS vanilla syrup
Just whisk together and refrigerate! Yummy!

One of my favourite weeds! Mum used to make a tea to drink and also boil it, drain and she would add oil ,garlic and salt! We would have it with fish ( roasted snapper)! What great memories! Thank you for sharing your beautiful and helpful video! 💕
My dad was Italian. I grew up eating dandelion leaf and sharp cheese sandwiches. He would mix the leaves with oil and vinegar. I haven't thought of that in years. Keep up the wonderful videos.

Mr brother met a Aussie girl cycling around Australia for two years on a very remote country road. He gave her my parents address and she stayed with them for a week. she told me her main food source was weeds, she’d collect weeds all day to use them in pestos. More energy than spinach & broccoli was her words. She had to eat 4-5 times day with all the cycling but couldn’t carry all the food so educated herself on weeds.

I have a "growing" interest in foraged food, so thanks for the dandelion inspo! I recently discovered dock, another edible green that often grows near or alongside dandelions. The small younger leaves can be eaten raw in salad, sandwiches or pesto, larger older leaves can be lightly steamed like spinach, added to veggie soup, blended into a cream soup, or added to a green smoothie. The botanical name is rumex crispus. I couldn't find the French word; Google translated dock as "quai" like a boat dock! I bet you have some on your property. It is a beautiful plant!
Bonjour Jeni and Justin! What a lovely village Marcillac is and although I've not visited it, I've been through the Gers region many times and it is lovely. That Broccante market was charming under those wonderful arched "galleries" You both came home with some wonderful pieces! Jeni…you were wearing yellow! You truly are embracing colour now …how lovely and your dandelion cupcakes look so lovely. We always use the leaves in cooking and salads in Italy and when I lived in France but I've never used the petals, so now I will! My Grandmother would make Dandelion salad! She would pick from her untreated yard. She would use apple cider vinegar and oil.
