Good GOD all that looks absolutely fantastic!!!
Mushroom duxelles were done back in season 4 with the Veal Prince Orloff. That's also the episode where she recommends a "Château Gravymaster" wine.
Julia got scolded after this episode…a ham is the leg, and there's no such thing as a "shoulder of ham," it's just a smoked shoulder. But really, it's all the same anyway, just from a different part of the pig, and doesn't make a huge difference aside from the size.
Sunday is wonderful with a new French Chef video to watch! There are so many memories when watching them. Just simple instructions and demonstrations. No ego either!

A duxelle does not look good though. It’s like a black paste which is so unappetizing. It’s great she smothers the whole thing in sauce. You can’t even tell what’s in there anymore

In the cookbook, he says you can do a regular ham by doubling the ingredients and the size of the pan, and one of those boneless shoulder rolls by halving everything. In other words, a useful technique you can apply in different ways. I like this; the plain braised shoulder would make a great centerpiece for a family dinner, and even with the mushrooms would be appropriate for a holiday meal with the family and some good friends.
