French Toast Suzette

For the French toast:
1.5 cups whole milk
3 egg yolks
3Tbsp brown sugar
2Tbsp melted butter
1tsp vanilla extract
Thick sliced brioche

-Whisk together the sugar, egg, vanilla. Once incorporated whisk in the milk, then the butter.
-Dip brioche in the batter and let sit for 10 minutes to absorb (Not in the batter)
-Fry bread on both sides in melted butter until nicely browned, remove from pan

For the sauce:
2Tbsp orange zest
1 cup OJ
1/2 cup sugar
1/2 cup melted butter
3Tbsp cognac
1Tbsp grand marnier

-Using the same pan combine the melted butter and sugar. Cook while stirring until beginning to lightly caramelize. Add the zest and stir for 20 seconds.
-Add the orange juice, it may look like it’s crystallizing but thats ok. Continue to cook while whisking until the sauce forms.
-Reduce until syrupy. Add the French toast and coat on both sides.
-Carefully add alcohol off the heat. Continue to cook until desired consistency.
-Serve with soft whipped vanilla cream.
-Enjoy.
