Guga, as I've commented each time you've tried it, confit is traditionally a preservation technique. Bring your meat/veg/spices with oil to temperature, and then with the meats/root veggies seal them in a canning jar for several months. Then you bring them out and heat/sear back to temperature.
Tomato, pepper, and garlic can be confit with herbs and served immediately, but save that oil for topping.
Natural fat oils have been a witch hunt.
Plant oils are the demons man has made.
