Here’s a classic French Mousse au Chocolat recipe —just eggs, chocolate, and a bit of sugar for a rich and airy texture.

Ingredients (Serves 4)
• 200g (7 oz) dark chocolate (70% cocoa or higher)
• 4 eggs, separated
• 30g (2 tbsp) sugar
• A pinch of salt

Instructions
1. Melt the Chocolate
• Break the chocolate into small pieces and melt it in a heatproof bowl over a pot of simmering water (double boiler). Stir occasionally.
• Once melted, let it cool slightly.
2. Whisk the Egg Yolks
• In a separate bowl, whisk the egg yolks with sugar until smooth and slightly pale.
• Gradually stir the egg yolk mixture into the melted chocolate, mixing well.
3. Beat the Egg Whites
• In a clean, dry bowl, add a pinch of salt to the egg whites and beat until stiff peaks form.
4. Fold the Egg Whites into the Chocolate
• Gently fold the egg whites into the chocolate mixture in small batches. Use a spatula and mix with a light motion to keep the mousse airy.
5. Chill the Mousse
• Spoon the mousse into serving bowls or glasses.
• Refrigerate for at least 2 hours, or until set.
6. Serve
• Optionally, garnish with grated chocolate or berries before serving.
