Grilled Beef Tenderloin Sandwiches with Gorgonzola and Port Wine Reduction Sauce
One (2-pound) beef tenderloin (center cut if available), trimmed of excess fat and any silver skin
3 tablespoons olive oil
2 tablespoons Emeril’s Original Essence
1 ½ tablespoons kosher salt, plus more for seasoning arugula
1 tablespoon cracked black peppercorns
1/3 cup chopped fresh rosemary and thyme (mixture of both)
Small soft French rolls, either pistolettes or small round French rolls, halved crosswise
1 pound crumbled gorgonzola, Stilton, Roquefort, or your favorite blue cheese
Port Wine Reduction Sauce, recipe follows
Allow the beef to stand at room temperature for at least one hour.
Preheat the grill to 425 degrees F.
Brush the tenderloin on all sides with the olive oil, then season with the Essence, salt and pepper. Sprinkle the herbs all over.
Transfer to the grill and cook, turning once or twice, until a thermometer inserted into the center registers about 125 degrees F for medium rare, usually about 25 to 30 minutes. Remove from the grill and let rest for at least 15 minutes before slicing. When ready to serve, slice the tenderloin crosswise into thin slices.
In a medium mixing bowl, toss the arugula with the extra virgin olive oil and season lightly with salt.
Arrange some of the sliced beef on the bottom halves of the rolls, then top with the arugula, gorgonzola, and drizzle with the sauce. Top with the top portion of the rolls and serve.
Yield: 8 to 12 servings
Port Wine Reduction Sauce
4 tablespoons cold unsalted butter, divided
1/4 cup minced shallots
1 tablespoon minced garlic
1 teaspoon salt
4 turns freshly ground black pepper
2 teaspoons sugar
3 tablespoons Cognac or brandy
1 cup ruby port wine
1 sprig fresh rosemary
1 sprig fresh thyme
2 cups beef or dark chicken stock
Heat half of the butter in a large saucepan over high heat. Add shallots, garlic, salt, and pepper and sauté for 1 minute. Stir in sugar, Cognac, and port, bring to a boil, and flambe (if desired) to burn off the alcohol. Cook until reduced by half. Stir in stock and continue to cook over high heat, for about 15 to 20 minutes, or until sauce has reduced enough to coat the back of a spoon. Whisk in the remaining cold butter; adjust the seasoning if necessary. Remove the herb sprigs and discard. Keep sauce warm until ready to serve (do not allow to boil).
Yield: 1 1/2 cups

The tenderloin might be tender and all however, the flavor just isn't in them like a strip steak has or brisket/chuck cuts.
