Hong Kong is home to more than 100 innovators in the field of food tech, who have dedicated their work to nourishing both people and the planet.

Joris Rousseau, executive chef at the one-Michelin-star French restaurant Feuille, turns to three of these pioneers for high-quality, sustainable ingredients to make some of his famous “nature-inspired” cuisine. Those ingredients include fresh produce from a vertical farm, plant-based milk made from a nut grown in the desert, and beer made from upcycled surplus bread.

Together, Rousseau and these company founders are helping to develop a sustainability-minded community, driven by a shared vision for a greener future.
