As some who hates onions, that looks like the seventh circle of hell to me. That said, I love your videos even if Id never try the food just for the history lessons alone.
There is one way Louis could have invented it. He could have had a “holy shit I’m a genius” moment and told his cook to make the soup. He still came up with it, even if he didn’t physically make it.
This looks like the precursor of 'Sauce Soubise'. My friend's wife's family make the exact same preparation but uses it as a sauce for roast leg of lamb on 'dripping pudding'. It's like a Yorkshire pudding cooked under the roast to catch the meat juices. They'd then carve the leg over it and arrange the slices on top then the onion 'soup' on top. Very old fashioned English cooking.
