24 hours after CRUSH (Part 1), and once the original SPECIFIC GRAVITY (Part 2) of the must has been measured, it’s time to add the YEAST to the must. These hundreds of billions of tiny little yeast cells have the most important job to do… converting most of the must’s sugar into alcohol, turning the grape juice into wine. Clever little devils! If all goes well, this process should take 7 to 10 days.
