Chicken Stew with French Bean & Potato Talasani & Brown Bhaat

INGREDIENTS:

3 tbsp of Coconut oil
1” cinnamon
1 star anise
5 green cardamom
10 peppercorns
5 cloves
1 medium onion finely chopped
1 tsp of ginger paste
1 tsp of garlic paste
7 green chillies slit
1 kg chicken
1/2 litre of thick coconut milk
250 ml of water
/2 cup of thick cashew nut paste
Salt to taste

For French Bean and Potato Talasani
2-3 tbsp of coconut oil
10 cloves of garlic crushed
1/2 kg potatoes cut into juliennes
1/2 kg chopped french beans
3/4 tsp of turmeric powder
1 tbsp of red chilli powder
Salt to taste

For Brown Bhaat
3 tbsp of ghee
3 bay leaves
1” cinnamon
1 star anise
1 mace
3-4 green cardamom
4-5 peppercorn
3 sliced onions
1/2 kg of soaked short grain rice (ambe mohar)
1 ltr of water
1/2 cup pf finely chopped coriander

METHOD:

Heat 3 tbsp of Coconut oil
Add 1” cinnamon
1 star anise
5 green cardamom
10 peppercorns
5 cloves
Add 1 medium onion finely chopped, sauté till it is soft & translucent
Add 1 tsp of ginger paste
1 tsp of garlic paste
Sauté till the raw smell is gone
Add 7 green chillies slit
Add 1 kg chicken
Seer the chicken for a minute
Add 1/2 litre of thick coconut milk
Add 250 ml of water
Add more water if needed
Add 1/2 cup of thick cashew nut paste
Add salt to taste

For French Bean and Potato Talasani
Heat 2-3 tbsp of coconut oil
Add 10 cloves of garlic crushed
Saute the garlic till it is golden in colour
Add 1/2 kg potatoes cut into juliennes
Add 1/2 kg chopped french beans
Reduce the flame
Add 3/4 tsp of turmeric powder
1 tbsp of red chilli powder
Add salt to taste
Mix it well
Cover & cook

Brown Bhaat
Heat 3 tbsp of ghee
Add 3 bay leaves
1” cinnamon
1 star anise
1 mace
3-4 green cardamom
4-5 peppercorn
Add 3 sliced onions, brown them well
Add 1/2 kg of soaked short grain rice (ambe mohar)
Add 1 ltr of water
Add 1/2 cup pf finely chopped coriander
Let the rice cook
Serve

  4. the coconut milk in a can on the shelf is some compound where the coconut flavor is added. the test is that when real coconut milk – first press becomes hot ( starts to boil) the coconut milk will curdle

  5. Nice recipes today! Talaasani is typical Saraswat recipe! I add a teaspoon of urad dal 30 secs before I put garlic for the seasoning of Talaasani! As you rightly said – garlic seasoning – oomph! 😅 Gham-ghami!

  7. Lovely food Smita. The Chicken Stew is similar to the Kerala one hain na, with the exception of the cashew paste which was not added when we lived in Cochin. Amber Mohur is our fav rice but very difficult to find anywhere. I once found some in BB but it turned out lousy. Can you make the South Indian Tender jackfruit curry please? I ate one at a wedding and it was awesome.
