a one pot citrussy caramelised pasta to brighten up even the darkest of winter days
i love fennel, it’s firmly in my top three favourite vegetables and one of my favourite ways to eat it, after raw in a salad, is caramelised with shallots and lots of lemon, cooked here into this orzo and it’s giving an almost French onion soup quality that i just can’t get enough of
it’s the perfect dinner to make when all you want to do is curl up on the sofa and with your dinner in a bowl, warming yourself spoon by spoon
I’m not sure which version of this recipe I’m more excited about, the brothy bowl version of the leftovers baked the following day

Get well soon and have plenty of oregano 🌿 in your next broth , also look up silver birch poleypore mushrooms. I made a batch of the liquid and steeped them on low in a slow cooker and then froze the liquid into ice cubes then add them to a herbal tea or even add one to a soup 🙏🏻
