Ingredients for about 500g (approximately 2 cups) of praline mousseline cream, enough to fill 6 individual Paris-Brest, for example:
• 25 cl of whole milk (about 1 cup)
• 2 egg yolks
• 30g of powdered sugar (about ¼ cup)
• 10g of cornstarch (about 1 tablespoon)
• 10g of flour (about 1 tablespoon)
• 30g + 120g of very soft butter (approximately 2 tablespoons + ½ cup)
• 75g of praline (about ½ cup)
