– water 95g [33%]
– instant yeast 0.5g** [0.18%]
**my room temperature is between 20 – 22°C (68 – 71.6°F), you may need to reduce poolish yeast amount if your room temperature is higher than this. Watch 3:16
dough:
– bread flour 190g [67%]
– water 108g [38%]
– instant yeast 2g [0.7%]
– fine salt 5g [1.8%]
– poolish at peak activity

how will i differ in taste and ease of kneading if i use all purpose flour instead of bread flour?
hi. may i ask if prefermenting the poolish is done inside the fridge for 12 hours? if outside the fridge it can activate fast in just 3 hours at 28 degrees celsius room temperature
