As a parisian I can say something hat you don't understand. Some people here are very happy to trying to speak english when they can. In many cases It's not insulting, it means "woh you speak english I will try to say all the words I know".

Paris est 2 fois plus dense que la ville des USA la plus dense (NY). (Et elle est la grande ville d’Europe la plus dense.) Peu de grosses villes au monde atteignent cette densité. Une ville comparable, c’est Mumbay, pas Rome ou Londres. C’est donc une fourmilière. – C’est une usine à touristes. Elle est la ville la plus visitée au monde. (Ce qui rajoute de la population au km2.) – Comme c’est une vieille ville, sur une petite surface, et très dense, l’infrastructure des transports est souvent saturée. Donc, les gens qui y travaillent sont stressés par les transports, par le bruit, par la prosmiscuité. J’ai eu l’impression de revivre quand je l’ai quittée. Vous n’étiez pas épuisée après une journée dans cette ville ? Mmm ? 🙂 Et la serveuse, eh bien, elle travaille dans une usine à touristes, elle est sous pression pour atteindre la rentabilité exigée par son patron. Elle voit des centaines de gens dans une journée et doit probablement trouver des astuces pour ne pas perdre de temps. J’ai une amie serveuse, elle est tout le temps fatiguée à cause des horaires, de la densité de clients. Les serveurs ne sont pas bien traités, en France. Voilà, en espérant que mon message vous éclairera un peu. 🙂
I usually find the French to be very supportive of foreign language speakers, even if the French is not perfect – and yes, even in Paris. In Suisse Romande, however, they will try to get you to switch to English.

Is it really that common in paris for waiters and such to insist on english? It didnt happen to me at all, but, to be fair, i was with my family and they could all hear us talking in portuguese, so maybe they assumed we didnt know english?
This happens occasionally where I live (not in Paris) as well. Like, I go to the restau with my friend and we speak English among us because she's American and I'm German. The waiter hears it and proceeds to speak English to us, although we are both fluent in French 😂 sometimes though they aren't french themselves and then I guess it doesn't make less sense to speak English.
That kind of “accommodating behavior” is become more and more widespread and pretty malign in character. Simple etiquette requires you to answer in the language you are being addressed at if you speak it.
I'm an Indo-Mauritian naturalised French but I'm usually mistaken for a tourist in Parisian restaurants and I play along because that way I'm better treated than the locals

But despite that, on several occasions, some people talked to me in english… incredible !
I lived in Paris and everywhere you go there are more tourists than Parisians. If you want to learn French Paris is not the place to go. Also if you think Parisians are rude think about all the rude customers who comes. Restaurants don’t have time to deal with all of them and most of the time tourists don’t know shit about French culture so they cause problems. I’ve met an American tourist who seemed nice when I spoke to him but he told me he’s been kicked out of 2 restaurants before meeting me… how is that possible…
I'm French living in Japan, that happens to me sometimes lol. read the menu in Japanese and ordered boar, and deer meat in a yakiniku. you'd think by the fact read theses words they'd have a hinch I speak enough Japanese to get by. and then they pulled out google translate on me later without even trying to speak japanese.
ordering the “menu” in France is ordering the meal of the day and not asking for “la carte”, that is the false friend of “menu” in English (I don’t know if “false friend” is the good translation for “faux ami”)

It is happening everywhere….English is complulsory in most touristic places. I leave in Barcelona. There is places where waiters only speak english.
