BOO-Jee French Onion Soup- makes 4 servings

Soup season is here! I love little ways to dress up tasty recipes to match the holidays! Here- you can cut up slices of swiss cheese to look like little ghosts toppers for this classic French onion soup! It’s sure to add a little spooky fun to your fall activities. If you are running short on time- its ok to use a canned soup (no judgement here!)

Ingredients

· 3 tbl unsalted butter
· 3 Vidalia onion- sliced
· Pinch of sugar
· 2 cups beef broth
· 1 bay leaf
· ½ tsp dried thyme
· ¼ tsp white pepper
· 2 tbl heavy cream
· 4 slices Swiss cheese
· 4 slices crostini or French bread

Melt butter in a large saucepan over med high heat. Add the onions and a pinch of sugar. Sautee for 15 minutes or until onions are caramelized (golden grown). Add the beef broth, bay leaf, thyme and white pepper. Bring to a boil, then reduce heat and simmer for 15 minutes. Remove from heat and stir in the heavy cream.

For the ghosts- use a knife to cut out a “blob” with a pointy tail. For the eyes and mouth- I used round metal icing tips- but you can also use a straw or cut out the eyes & mouth with a knife.

Top each bowl of soup with a “ghost” and serve with a slice of bread. Enjoy!

  1. The hardest part is slicing the onions! Sauteeing is much simpler in comparison in my opinion (I couldn’t stop crying when I chopped a million onions)
