– 3 tablespoons unsalted butter
– 4 large onions, thinly sliced
– 1 teaspoon sugar (optional, helps with caramelization)
– 1 teaspoon Herbs De Province https://youtu.be/CsCwhtqRbII
– 1/2 cup dry white wine (optional; can use additional beef broth if preferred)
– 4 cups beef broth
– 6-8 cups cubed bread (preferably a day old, something sturdy like a French baguette)
– 1 1/2 cups grated Gruyère cheese, plus extra for topping
– 3 large eggs
– 1 cup milk
– 1/2 cup heavy cream
– Salt and pepper, to taste
– 1 cup croutons for topping
– Little Beef stock as a gravy
Oven to 180°C (360°F)

Hi Rik, This is the first time I've seen this recipe made this way, and I've been French for… over 50 years! It's much more liquid and with grated gruyere. I love the day after New Year… before getting back to the aperitif ! But it's a way, no problem for me.
