Eclairs are a great French dessert, filled with cream and topped usually with sugar powder or dipped in chocolate.
Ingredients
113 grams of unsalted butter or ( 1 stick)
1 cup water
1 Tsp salt
1 1/2 tsp sugar
1 cup flour
4 eggs
Vanilla Pastry Cream
2 cups Milk
2 tsp vanilla extract
1/3 cup sugar
1/3 cup cornstarch
4 egg yolks
1 tbsp unsalted butter ( after taking off the heat)
Chocolate Glaze
200gms chocolate melts
1. First prepare the pasty cream to have it ready and cooled by the time the eclair is done.
2. Whisk the egg yolks with sugar until it is pale.
3. Incorporate the cornstarch, Pour the milk into a saucepan and bring it to simmer. Pour about third of the hot milk over the egg yolks mixture and mix, Then pour the whole mixture into the saucepan over the rest of the milk. Bring to a boil while stirring until it thickens, turn off the heat and pour it in to a glass bowl to let it cool.
4. Preheat oven to 350F
5. In a saucepan add the unsalted butter, water, salt & sugar let it boil all together, take off the heat and add the flour and mix well. Put back on stove and mix for another minute to combine it all together.
6. Remove from the heat and add 4 eggs one at a time mixing with a wooden spoon.
7. Fit a pastry bag with a large 1/2 inch round or a star tip and pipe the dough into 4 or 5 inch long strips or round.
8. Bake for 40 minutes, take out the oven and let it cool for 7-10 minutes. Then pipe in the vanilla cream in to the eclairs.
