The first time I tasted OUEF DE COCOTTE was at a small charming cafe in the streets of Paris.

I absolutely had my Ratatouille moment and I knew I had to recreate this dish and I have been religiously doing so for the last few years.

Let me share with you today an easy way to prepare this classic French meal.

Ouef de cocotte – coddled eggs recipe:

For the potato mash:-
2 small potatoes boiled
1 tbsp butter
1/2 tsp black pepper
1/2 tsp chilli flakes
Salt to taste

Mash everything well together. If you want, you can add a tbsp of cream.

1 tbsp oil
One large onion sliced thickly

Caramelise the onion over low medium flame. Add in 1 tbsp of garlic and 1 cup of spinach.

Add salt to taste. 1/2 tsp chilli flakes and mixed herbs. Cook this for 5-10 minutes till the spinach has wilted and the excess water has dried.

To assemble:-
Put 2 tbsp of the potato mix in the ramekin. Top with 2 tbsp of the spinach and onion. Top with 1 or 2 eggs.

1 tbsp of cream
2 tbsp full cream milk
2 tbsp of grated cheese on top
Sprinkle of salt and pepper

Bake this at 200C for 12-15 minutes.
