Julia Child, and a couple others, got me to try a lot of different dishes. Very thankful I stumbled upon her many years ago.
I love pearl onions but they're not available locally in my country. Would like a medium-large onion dice work as a substitute?

It’s traditionally made with rooster hence Coq . Chicken is Poussin. Coq , rooster, has a slightly stronger flavour.
But didn't Julia child's love any dish that wine was one of the ingredients?

Beautiful dish!!!! I grew up watching Julia back in the day when she was on TV and it was black and white. I miss her and watch her shows via YouTube. So,…Sam and sons,…if you're gonna do this dish then, why not duck confit (tacos?)??? I know you can and I also know you'll figure out how to both make it easily and tasty and with something from the special-Sam bag o tricks!!! Please? So why add thyme stems?? Just take the thyme leaves off and sprinkle them on the dish like and other garnish. Other than that great looking dish

You could have just rendered the fat from the bacon and skipped the oil.
no one likes skin on chicken unless crisp, sure that's the flavor everyone likes but crispy, any type of moisture turns it unpalatable, rubber, they scrape it off.
