[Music] hello hello welcome to chew on this a food talk show with Malaysia’s top culinary Talent exploring the many influences our pet has on our personality through food drink and banter I’m Tien and I’ll be your host into this world of Good Eats and Gastronomy I’m incredibly excited to have two of the most celebrated chefs in Malaysia right now Masashi huchi of antia in K and Po in bamboo Hills and Aiden Lao of aad in ttdi these two usually have insanely busy schedules so I’m very happy that I could steal them away from the kitchen for a couple of hours to come hang out with me on this very first episode Masashi he’s the creative head of two of the most celebrated restaurants right now and he and his team have picked up four wins at tler dining Awards congrats congrats uh thank you for those who hasn’t had the chance to din in a restaurant before would you mind giving a little explanation about ATI and P okay anti dining is a casual dining and we have based on Malaysia product and uh PO is more fine dining then also it’s using the Malaysian ingredient product French based of dining I see thanks thanks um so Masashi I think I I you first came here in 2018 am I am I remembering that correctly yes I think we first met when I when onti first open yes yeah yeah that six years ago six years ago yes uh um little fun fact aen I I worked with Masashi on a Lexus RX video shoot 2020 actually I looked it up and it was January 2020 and uh just two months before covid actually it’s crazy isn’t it uh yeah and uh we went to paja we did the whole shoot I went for lunch with Masashi we had P me and then uh the next day he calls me I have pneumonia oh yeah so he was insanely sick but he just did the shoot and the shoot was went fantastic by the way uh and my my next guest is Aiden the captain of the team at AKA uh restaurant wholeheartedly championing the advancement of Malaysian flavors and produce with contemporary technique Aiden tell us a little bit about your food at AKA for those who would like to try and D there one day all right uh at AA we try and highlight a lot of local that are not so commonly known and try and highlight them in the best way that we think is possible not specifically to any quisine box I guess right okay all right thanks so um I think I met Aiden 20 a bit later right after the later yeah pandemic kind of settled down a little bit uh some fun facts of Aiden he also pick up took home two wins at the recent tler dining award one for Rising Star I believe and one for your restaurant congrats um okay so now we know a little bit about how I know both of you right uh how about you two do how do you guys know each other uh we met many time in the K Festival yes yes correct actually I know you for a long time already yes correct and uh when we visit Harmon mango har corre then the then that time it’s I know the and then study in Japan yes sui kinar cooking school yes it’s a me too it’s a i Le in Osaka Kary school but a different period yes so he is my Senpai legit Senai legit Senai legit legit no but really different was it same campus also yes there’s only one campus in yes yes yes right right but do you take after the French Leon yes in Leon also take the French course correct correct yes how many years were you in fren for two two plus so it was first at the school at Leon yes and after that moved to stash and then I stay there as Ki Oh which restaurant you which Resturant in a small small little vage no one knows it’s called kaiserburg I’m I’m the only Asian there yeah oh then you definitely felt must have felt homesick at one point uh you know not not too much really I was just trying to you know when you were young you just trying to go true yeah I was doing the same but I felt homesick from time to time okay okay so you know um which is why we’re we’re here talking about the whole topic today homesick right uh and why are we talking about being homesick uh so for context each uh when I was uh you know thinking about you guys and I was thinking what connection we had and at one point of our life we’ve all worked or studied abroad overseas and we spent a lot of time overseas and I’m sure when I like I I mentioned earlier when I was feeling homesick I would crave for foods that I would used to eat growing up here right just a little bit of connection of home and and that’s really the B whole the whole theme of the episode because I want to know what you guys like to eat when you’re homesick and so it’s uh customary on Che on this to start off with some snacks that fit the theme of our discussion today and I like to call this part of the show snack on this okay uh so yeah we we uh as I mentioned we all brought one snack today um for me uh this is my snack I brought Ki puff oh I Okay the reason I chose Ki puff is that you know it’s um uh well this is a fancy cpff when we’re growing up right the the really cheap Cari puff we get is basically just filled with potatoes and car chicken carry that’s it and the chicken curry no meat just Curry oh yeah so kind of like a chicken flavor like a Malaysian version of kryon but cryon has meat inside right only on potato the cheap version then this is the fancy version the so it upgrades there’s now like chicken inside there’s egg inside and yeah I love eating Ki puff because when I’m homesick because it reminds me of like when I was a kid at a canteen you know hungry doing recess I buy some Curry Puffs and the curry is very uh Universal I would say the chicken curry inside it feels like yeah it could be the curry you’re eating chai and so it reminds me of other types of Malaysian food if that makes any sense give it a try I hope you guys like take one take one it’s a bit full it’s a bit much you don’t have to finish the whole thing but right now yeah please dig [Laughter] inas how’s it nice nice nice meaty very food Garing yeah this chicken there and then potatoes I nice spicy spiciness of powder mix car mix Powers actually you know I read something really interesting about Ki puff uh last week uh when I was um looking for some to buy online I found out there’s this um company called taste Atlas they ranked Malaysian kpff as the fifth best pastry in the world oh uh it won uh other pastries over like French cant number eight oh what do you think about that better than better than yeah and you guys are you know you lived in France you studied in France you know French cooking uh what do you think about that how about the Japanese K Pang yeah um they didn’t say what number I didn’t see what number but yeah K number five number cron number eight uh baklava number 17 you know the Turkish pastry many layer pistachio yeah Lot pistachio sweet it’s kind of like a I’m going to say this wrong mil mil that but puff pastry also many layers of pistachio honey I think right and then number 22 was Hong Kong pineapple bun so our puff pastry what do you think massage better than crossa you can be honest this one is afternoon yeah depend yeah is morning I cannot eat this for morning as well really not even the potato version the simple no it’s just too much spice okay so you tried K puff um let’s move on to mashi snack yes I have Masashi why don’t you explain what this is guys Aiden have you tried this before I have tried it but not the not all the it’s called Baby star Ramen I think this baby star lamen it’s a since I’m kids still long sell long selling is exist to same taste same quality wow so you eaten this since your kid is the same yeah if open the one pocket cannot [Laughter] stop no matter how big don’t care but is a yes it’s called Baby Sten in Japan have called dagia okay it’s a only snack for kids come to buy the small strange B and like chewing candy right okay it’s now less exist it’s very famous it’s baby baby star L it’s it’s take one packet then give it to the counter then the I think Sanu 30 30 yenen yeah that’s really cheap he 10 C yeah uh no it’s about almost one ring today exchange almost 90 something cents yeah correct correct correct correct is it still the same price today I don’t see I don’t know I don’t know long time I I never eat but today you where you found it donkey donkey or uh so I bought it from uh Shia AIA okay yeah don’t has a lot of lines so okay okay okay but I bought a few few flavors but I if I’m if I’m I think the original flavor is chicken correct actually now but is inside the packaging so this one I bought is a few different flavors yes correct uh there is a sauce flavor sauce flavor and chicken and the uh less salt yes right who wants less salt eating a snack food yeah because it’s Japan everything healthy I don’t take it’s many snacks in my kid time okay because I like to play baseball then my coach say don’t take this kind of food then uh I take it’s always dry anchi in the pocket serious serious serious I take dry anch and two L of milk every day that is your snack wow yes that is not snack that’s not snack the dry be maybe maybe snack milk that’s a lot of milk but in the school Hub it’s called how to go sorted no out of school how to you Club no not club like extra School activity then the teacher say only uh 500 y okay and the snack can buy the bring to on the day I see only 500 yen limit yes so this time the parents give to 500 yen to kids any snack can choose to go by the bring to the for called en exion then I crazy is I take baby star snack is very memorable sure I take the so reminds me of your that time when you have the 500 you can buy whatever you want yes want more kind of a snack okay uh I think this is the original one right this is the one where original one I think top one this one oh I guess I tore it a little bit open shall we try this first okay yes so you must be very familiar there is a Yaki SOA flavor sauce no it just says Yaki SOA Yak SOA flavor yeah tastes quite a bit like Mommy monster really yeah Mommy monster yes I never thought mommy monster should that this is our that is our baby sty we eat in in growing up okay let’s try this is the Yaki so so still the same taste you remember as a kid yes M you can eat this like a picnic yeah I like this more yeah actually this one is nice yeah this one was actually the yakis so it tastes like Yaki SOA really good from the sauce M oh really yes this is so the bulog sauce yeah so if this is your this is your first time eating it you said yeah how do you how are you finding it masachi childhood snack it’s very nice no this is yes night time after go home after service after go back to work and if nothing to eat is a sh with one te of beer and the baby sty it’s um amazing you know Japanese snack it’s when open also it’s very oh you’re supposed to open like that yes I’m opening it wrong this is how Malian open yeah yes correct when the chips po the chips packaging also when open it’s super easy to open yes yes the the the Japanese know how to you know packaging is a lot of a lot of going into the packaging cuz when you open it’s easy for the for the consumer from their cup noodles easy and then they even have that like thing you put the hook to close the cup noodle list if not easy many customer complain really yeah really it’s problem Japan so stressful okay we have um one more snack to try yes it’s Aiden’s Choice yes tell us Aiden what do you have for us you know this this this looks very familiar for some reason think it will be for a lot of Malaysians oh thank you because this is the snack that I always want to get after school when you go back home I mean for us Malaysian there’s always a we call it Roy man right right I know the guy that rides on the bike with the you explain to Masashi oh Malaysia also H Japan too Japan too when kids time one bik yes corre exactly yes yes yes but all parents don’t buy the from this guy why why no true even teacher is a the guy come to in front of school stop then all kids want to go by yeah yes but many parents is it’s not healthy it’s not don’t know how to make and what do they sell the one in Japan uh Li uh Li cracker S no not not s you know that it’s maybe it’s based on but the rice rice popcorn rice popcorn yes okay interesting so making the to to to Boom after become Li become ah okay like the rice but not fly one right like ar ar so yeah Duan Duan popcorn um yes this you said you were saying this is the snack you would rush to after school to buy yeah to get it from the Ry men but they don’t really sell this ours they sell a lot sometimes they sell pan they sell bread they sell sometimes ice cream sometimes ice cream sometimes ice cream Ice Cream Sandwich cream sandwich then in the front is all different different plastic then have all different different snack ex yeah so out of all the snacks that were there the Duran stood out to me because in my family Duran is we don’t have it every day it’s expensive seasonal so it’s like a luxurious item so I see this on the package I say okay I want to get and I love okay I let’s try some okay so Malaysia we open like this it’s the worst way because you cannot close back you have to finish now okay you smell first you have to smell oh my God like my childhood oh wow it smells like um you know this that’s like pong ice cream almost yeah almost yeah can I try pleas pleas M it doesn’t taste like popcorn at all why is it so cornflour base cornflour base yeah probably that’s why I remember when I told you about this snack I didn’t say to him dur popcorn I say Duran snack then when I find online it’s came out Duran popcorn oh it was a popcorn okay but it didn’t taste like popcorn to me I think you can eat this with milk too cereal cereal it become soft this one like taste like in Japan also actually similar taste called car caramel popcorn oh I know that caramel popcorn is more sweet sweeter that’s right without the durian flavor but the durian flavor is very uh light Pleasant yeah it’s Noto strong yeah that’s right but it’s good good good not too strong and continue to eat I you can you can definitely finish one bag easy easy but yeah how do you find this anyway nowadays online I don’t know shopy you B A shopy I don’t know where it came from but shopy has a lot of it we now move on to the second part of the show uh what I think of as the main CA we talk about three topics that help me understand you guys a little better my first uh the first topic we have uh is I want to know uh in the in the in the spirit of the episode’s theme of being homesick uh why did you guys come to Malaysia to cook uh for Aiden more specifically why did you come back when you were working overseas and for Masashi why come to Malaysia when you you know before anything at all yes it’s uh I’m very lucky I never thinking is zero person to come to work in my life but when I work in Euro uh UK London I married with my wife and the first son is born in London then still continue walking walking then I got the second baby then uh when we had the second baby I discussed with my wife oh maybe we now time to go back to Japan I thinking then I starting talk to many people then I got many offer same time then my friend Singaporean called me why not come to Singapore to walk then I didn’t go back Japan directory then after thinking it’s oh why not Singapore is I I never I never know about South Asia even Singapore is a small country or what happened story of Malaysia Singapore beginning then I just visit even uh our boss come to the interview London in London then there do the discuss I came lucky to after I got toal in ALA Hotel uh making the open restaurant so I decide to come to Malaysia big chance yeah big chance and now it’s been six years yes already 6 years time is is very quick yeah are you are you still enjoying living in Malaysia yeah I love Malaysia it’s now is a so so when we stay starting life in Malaysia the our kids is still small but starting in grow up in Malaysia really my wife also happy for the Malaysia condition everything it’s a really we enjoy your Malaysia life that’s great that’s great yes uh if you don’t mind me asking you one question related to that came to Malaysia your first time what is the most culture shock thing to you you experience about Malaysians about Malaysian oh many S I don’t know I can’t tell is a this kind of comp complain or [Laughter] shock my yeah Che chef of the friend welcome Malaysia when I talking something this kind of topic welcome Malaysia then okay but most shock it’s not enough clean not enough clean but you know the Japanese have a very very high level of standard for cleaniness every every other country is below Japan I think so very hot very hard yeah very hot and the constrction of traffic is a all fly yes 1 two yes yes yes yes even GPS confusing that’s true yes this one I really shock for when I driving in Malaysia Japan is very organized it’s hard to navigate in Malaysia especi you’re not from here yeah whereas you know um in other countries like uh more well planned cities like uh even Melbourne or London is all straight correct you say this street this street you know the corner right see the corner but Malaysia is like well there’s one and there’s one St one one St two I don’t know because of buet is organization less organization is is yes Japanese very organized you look at Shinjuku station oh my God but you two after you come in leaving new condo nearby Bank I living in the bank house yes you know the with what call is what the highway H Federal feral to cross on each direction for the it’s wor connection of yeah I I I I can understand how there culture sh yes yes yes yes sorry yeah what’s your what’s your why did you come back to Malaysia you know for me before designing it was never a choice um it was never by choice and what I mean by that is I never plan to come back is at that point of time I plan to stay on longer in France like how I did in Japan but after the sins in Japan and moving on to France there was a period that I felt really really homesick oh me I don’t know whether it’s because I’m the only agent in the whole oh yes in the whole village no there was no rice culture there was nothing I could relate to it’s very very different different and everybody knows where I stay everybody knows what I’m doing every day because I’m the only agan and it’s a very small village only around 200 people maybe very very small so at one point I felt really homesick and just wanted to and then a chance came uh so there was a job offering here back in Malaysia to open a new restaurant was a good offer and it was a really unique concept at that point of time so I say okay why not I came back I’m glad you did I really totally understand and then homesick in Europe yes it’s a different kind of homesick from when you’re in Asia I guess as feeling Asian feeling is because European and any yes uh Asian people and but like T is study in Australia for year I think you know but when walking it’s not school and walks it’s totally different feeling it’s need to fight with the if French restaurant is a French people strong character I see yeah further exploring that home sickness right it didn’t get so bad to the point where you know you’re like okay I think it’s time to come home or a little bit more or just like half oh you know it was the right time the right moment the opportunity came yeah it was a bit of both so actually we have already submitted to extend my Visa and the company has already applied and paid for it uh but some bad things happened at the restaurant and couldn’t really see myself going further uh with the same culture and lifestyle that’s happening there and at the same time Malaysia has this offering so at the end I told them maybe it’s time to call you quit so I just came back yeah so now I understand a little bit more about how you guys experience uh you know when you were guys were working abroad and you experien it homesick um which actually brings me to the next topic and kind of like what are the flavors and Foods you crave when you have these homesick I know we export a little bit about the snacks that we chose but um you know what dishes do you crave let’s start with masachi what what are the tree uh you know foods for me is noodle all kind of noodle when in Europe is cannot get same quality yeah Len and that’s why in Malaysia still quite quite nice yeah because you have a lot of Noles okay so one of them is noodles you say Ramen and you are for fuku so does that mean the ramen is automatically Hakata okay must be T when you say raen is T what is what is hak St oh yeah tongu t yeah is a poke poke Bon St okay okay yes yes yes yes yes yes hakas I I I I you know IO is hakar okay so it’s it’s very popular in Malaysia because we love strong right is the strongest of all Ramen and also it’s many so Ramen um what what which Ramen did you go and eat when you’re homesick here and you want to eat ramen here uh my wife make but I canot go to your wife I canot go to your house and eat here in Malaysia now yeah yeah the next best choice after your wife yeah your wife your wife’s in Japan now okay uh Sushi yeah I want to eat a really nice Sushi you want to eat really nice Sushi yeah I like simple my mom cooking it’s really miss in always time because uh my mom cooking is very well is a any any recipe uh Western food Japanese food and Chinese food and all all type of cooking is very uh standard nice fre to cook then when I go to back to Japan I want to eat really it’s my mama cooking miso soup my mom is still making m p miso still making herself own Mis yes yes it’s a lot of work right yes and the PE clu and rice rice father make then sometime I eat I buy just hak it’s famous M oh Meo and sha Seafood just rice of and the fresh rice of B and the Mis soup my mom Mis soup and picus and M and Sh or something from fuk see Seafood amazing enough that’s enough that’s what you mean by simple Foods yes yes yes I would say that’s already one whole category of mom’s cooking special right yeah and everyone is different did you also have that privilege growing up with eating mom’s cooking uh my mom was not very good cook me me too that’s why I say lucky but I do miss some flavors uh from her specifically just because of the occasions that she will only make certain dishes and that kind of grew on to me that it’s something special right so family dishes right yeah family dishes sometimes she will cook westerns but only on special occasions like Christmas stuff like that but now know growing up looking back you know that was that wasn’t a very good dish but sorry Mom it g it gave us a she knows about this I talk to her all the time but give gave me a very form memory growing up about food and what food meant to us you know it’s all about the memories you know the sentiments yes I I think I’m we in a similar boat because my mom also sucks at cooking she knows she sucks at cooking she hates cooking but my grandmother is a great cook so it lost somewhere in between I’m like uh what happened all the recipes gone you know like the skill gone well you know no choice no choice uh so what what what about your tree dishes Aiden you know I miss Pak I love Pak M as a matter of fact my grandpa I I’ve never seen him before because he passed away before I was I was born but rumors rumors is that he eats Pak every day until he died so I’m not sure if it’s a good thing or bad thing but throughout all the members of my family we all love Pak especially me where do you go to eat Pak well I get my usual fix in Kong oh uh name Hy I think I’ve been there before you before yeah is that the one that’s M on selected uh yes yes I think so I I like that try yet I like that didn’t try yet but clang bakut lovers would probably not prefer that because it’s like a lighter style yeah that’s just me I like clang style Clank style very rich and strong so I always go to drive to clang to eat and it’s it’s honestly quite far it’s 30 minutes there and then 30 minutes back so one hour at least minimum traveled to eat one dish oh still I I didn’t found the difference of I clak and K Bak is really still cannot see the difference I see yeah so the yeah last month I think I went with DAR de he brings to me [Music] theak was nice but uh just now you say the one star no it’s a B Bak is different for me still cannot see but I love Bak really one of your favorite Malaysian I love I think for for when there’s a Japanese friend coming over to Malaysia there’s always two things I bring them to try Pak and chicken rice I see for me it’s Pak and pan me oh you because uh a lot of Japanese people like py I feel it’s chewy so reminds some of like udon a bit right and um Bak they like because they like eating na Hot Pot stuff in general and it’s a very unique uh hot pot right you eat it with rice and you put the soup in the rice nor other hot pot you you eat it the rice as a side dish or you know along with the soup especially in Japanese culture but yeah I’ve never met Japanese people who say I don’t like Pak always like Pak and so nice Bak we should create a restaurant in Japan resta no I talk to one time it’s with my friend in Malaysia friend it’s talking that what we do future oh maybe B shop in Japan but uh we fighting with Singapore type or don’t need to fight there’s only one type there only one fighting but I think Singapore maybe Japanese like more Singapore type oh soup type then then lady fighting the Finish discussion okay so you one type Bak two other dishes is Duran a dish but I miss Duran yeah no it’s a food definitely durian yeah yeah yeah specific type uh I like the bitter ones so yeah I like the slightly bitter ones so good Mustang King nice yeah uh 24 is nice more bitter than sweet or more sweet than bit uh more slightly bitter than sweet yeah I love I love Dian too it’s like six year now Malaysia I love Dian I if I live Malaysia I miss Duan true you will miss you cannot find the same even yeah that’s true anywhere uh I I heard we produce the best Duan in the world oh I think so China gets a lot of it so yes China gets a lot of it because we we export uh but yeah what kind of do so he is more bitter than sweet how about you uh I don’t know I got the experience of Duan Jer Duan comption oh yes you hold on I got the chance to do judge so I don’t know it’s around how many hundred type of Wow Wow but one section it’s black tone m m one section is uh mus King but different Farm put on the table then uh one one uh line it’s non non category uh only yes no name it’s comp then found number one I I got to likey give to draw to which which line to taste because cannot taste whole D so I taste it mus King musang King tast taster and I taste in one shot is I don’t know it’s around are so much I have picture but I don’t cannot show now but one day in one hour need to taste all then I need to take how do you judge the durian what criteria so just inspiration this one is a oh more nicer but for me no problem like Duan taste so I can continue to eat so just eat just but I listen like d master or something talking like this and try this try this then the listen to master say oh this one nice so I try oh really nice so means this taste is nice there’s some reference you know well you you definitely more Duan expert than you all of us here judge judge judge at the then finally it’s a black p oh p uh first blackt tree from overi then the since uh beginning the making the black Tone come to in Malaysia original Three of blackt winner wow but blackt so nice but I prefer musan King okay because musan King more consistency right when go shop is open then no mistake I never knew you was such a durian lover compound also sometime nice but some sometime 5050 5050 next time if I have episode all Duran I invite you back the Duan episode okay but since I came Malaysia I love durian my family all love really even your kids yes wow crazy yes you said even by the tap then is in the house everybody put glove and attack for Duan right do you do you know that um after after it’s like a old wife’s taale that if you drink water from the Duan husk it’s more cooling after you know so of course expert what about your third dish Aiden what’s what’s the third food s in between nil or Roti chai oh that is hard it’s both easily accessible at Mama yes oh but it’s either one of those maybe today is sasil then the next day is RO M but Ro CH you mean like Kong with on the side D on the side not sweet right no not the sweet kind did you know last year there was a Association that was that ranks breads throughout the whole world and Roti chenai was ranked as the world number one oh really so Ki puff now we’re winning guys really a really good texture and yes yes you like yeah I take also with egg uh no just in dal yes yeah that’s one that is also something I crave uh but like I said and the Frozen stuff is just different you know yeah it’s not the same not the same not the same like for example you can get Nat and of good quality here because you can keep in right but Malaysia freeze the RO chai ship overseas not the same oh it’s like fresh Duran and Frozen Duran oh totally yes yes want to know uh when you guys go eat in a restaurant for the first time like a new restaurant what are three signs that tell you that it’s a good restaurant oh when you [Laughter] d three sign of good restaurant but s so until finish no no no can be anything can be like it doesn’t have to be all finished but it can could be like oh maybe cleaniness Ambiance menu concept uh Taste of food you know service oh okay of course is first is the taste of food this one is a first point and then uh next is service then the SD is uh price okay price is important because yeah is yeah price important I think not to overcharge not the it’s a yes the value you get for a certain price yes yes yes yes yes how about you Aiden I tend to look at the menu a lot first before I go to any restaurant to me if it’s like a the more specialized the manual is the more attracted I get I don’t want to see a lot of different dishes maybe because of my time spent in Japan you know there’s a lot of specialized shop they only spell sell one thing or two things and that’s all you know specialist specialist shop so there’s a there’s not a lot of it here but if you find a good place that only has like 10 things on the menu you know they’re going to do it well you know they’re going to put a lot of time and care to make sure they can get out the best they can you know versus um restaurant that has like I don’t know 80 items and you know no one’s going to be able to get everything out fresh for 80 item and you know so I think that’s the first thing I look at and of course like masachi say service or cleansers uh but in particular I like to tour the toilet a little bit to the toilet please explain yeah true true no but your question is which level of restaurant any kind of any as long so what is the three signs of a good restaurant yeah could be also cheap from cheap to expensive they still should have a good sign right yeah yeah yeah sorry example long Q for just one Specialist of noodle shop toilet is not standard it’s lower also but it’s happy for the price and the quality consistency and the the taste so that’s why a s g it’s maybe it’s category of level of Resturant totally different saying let’s say uh tree the tree the tree sign for ramen restaurant thousand yen is different for 15,000 okay okay okay okay so now let’s talk about fine dining then F ning yes F ning is really uh totally uh [Music] different okay uh pass need is a originality and of course is fining is cannot say is cannot give food quality it’s low it’s so don’t say it’s it’s a the good food it’s already [Laughter] nor m s is not cannot put in three so the fin is then originality Ambiance and when the Finish totally give to different time to have the experience of Happiness of finishing of provide experience sorry my English it’s that’s difficult to understand are you trying to say like s how satisfied are you oh I think it’s probably meaning like when the guest leaves you know and then when they think back it’s a very pleasant experience for them so creating that memory is very important I would say that’s really hard if fin yes because after B then if shock Ramen do this okay no no no that’s true that’s true is fair good points good points how about you Aiden um generally my three criterias are quite general for all restaurants I think okay apart from like very very dodgy H stes or what not but restaurants in general I think need to have a relatively nice toilet it doesn’t have to be very luxurious but it needs to be nice and and and clean and comfortable at least you know that’s the least think the last one for me is also Ambiance so whatever you’re selling whatever your concept is needs to be related to that Ambiance you’re trying to get you know a bar cannot be too quiet a fin cannot be too noisy you know vice versa you know so Ambiance that’s about it okay okay yeah I know thanks for sharing I feel like I’ve learned a little bit of few points from you guys okay now I have a uh I have a follow-up question from the tree signs have you guys been to a restaurant here recently that has all these three signs me so free first for alaka restaurant I think atelia botan does a pretty good job other than the toilet that needs a little bit of work okay but but but but I think they have you know a very nice niche menu that thinks they are seasonal and is doing very well and they only keep it at that few items so you can kind of guarantee that quality is going to be there for alakat place no no one one just one which restaurant you Dy recently that has all the things the points you just talked about oh okay okay okay okay [Laughter] they how was your experience yes it’s amazing is uh for me I really uh respect him younger than me but I I respect him the hard work and uh behind of his effort is really for the chef respecting and lucky to connect in since six years ago I met with him and many think help to advise me to grow to how to survive in Malaysia and then I like really de excellent excellent even for me all my experiences at Dean is very very good me too since since kdu days oh I still remember that yeah yeah yeah yeah yeah yeah yeah okay thanks we so we we finished the second part of the show and we have one last segment and I’ve already asked both of you to create something special for the listeners today uh so so this segment we’re going to call uh bougie bites and it’s basically an exclusive recipe for listeners to try to create a home using the snack that you chose today okay yes do you remember I hope you remember the recipe I I don’t have it in grams no no course I have the idea of it no worries but the idea is just basically to come up with a way because you know we don’t have your culinary skill your talent your creativity to come up with something so amazing so using such a normal snack how would you create something fancy at home you you with K puff next next to the next to they make something I cannot I’m not sure only us only you too it’s a game for you too I’m the host I don’t know okay but you know it’s it’s a definitely a a big ask I know to ask to create a recipe or come up with a something for people to create at home what are my my real question is how do you make your snack baby star and how do you make your snack Duran Puffs Duran popcorn uh you know more lucks at home Duran Puffs is very easy you don’t have to cook anything just buy Duran puff uh get a top of ice cream from minus 4 oh what flavor uh vanilla works well I think oh or milk any milk based flavor uh just top it up and eat it like a PA oh oh some fruit you know that would be nice fruit Duran puff and ice cream yeah okay it sounds easy to make and super easy super easy me snack you want to have it for breakfast is good as well I’m guessing you’ve tried this many times before no okay okay was a good idea though yeah it’s a an idea okay I recommend for me it’s because uh you ask to the for Chef use to snack is really is my broken sorry I know it’s difficult we only use on things cor this using snack know if I recommend I do the monjayaki okay okay what is monjayaki for it’s it’s from Tokyo theim area okay is since a long time ago is before they Mak in just flow and any vegetable cabbage and onion spring onion then The Temper you know the when make tempor and come small oh the t t yeah tenas and it’s a then just making it inside of very like crepe the pot yeah uh dough or mix then in on theak making a small spatula to make a cook yourself then any garish you can your yourself to make can make put cheese also and one of good garnish is baby styen why it’s making the crispy so correct me I’m wrong Baki is like okonomiyaki yes but you make it yourself uh noton it’s it’s sorry for those who who never seen picture monjayaki I’m helping them know it’s like it’s like like a pancake size yes but lighter then it’s more liquid oh yeah yes uh what’s the Japanese for uh Doro D droopy droopy like thick thick right yeah it’s a a bit messy yeah you have to cut right I think no or you ship ship no just is when the part of on on top of tan and the outside it’s starting cooking enough so just take a small spatula yourself and put in okay okay okay okay okay so it’s like a mini pancake small one maybe so do you actually eat with the spatula you don’t use uh Chopstick no a small I think many people go to tourist go to in Tokyo but many people don’t try the monjayaki right yes it’s not uh as common as popular popular as ra or sushi correct can you find monjayaki here in Kill no right his house very easy very simple but just hot to plate or something it’s frying pan frying pan also can but not fun need to manage the dness of texture yeah to and garnish it mix with yourself yeah and eating a bit small bite then drink drink Yes sounds fun um I know you shared a bit of a recipe with me no uh obviously we’re not going to go through the whole recipe now but I will be sure to post Mash’s recipe up on our social media so you can take a look if you want to create mjay Yaki at home you just need baby star right but but better to any YouTube or something how to make monjayaki then better to realize if not this is monjayaki you want them to create something wrong they create because looks looks not not so uh okay yeah I will be sure to inform them my YouTube videos but yeah I’ll share with the recipe you you you shared with me earlier yeah that’s all for today’s show thank you Masashi
