  4. I’m sorry not sorry, that is NOT mash, that is more like puréed potato. You have your textures the wrong way, mash has texture, gravy is smooth.

  5. Dont need to cook the shallots for an hour. Look up the Americas test kitchen way to cook caramelized onions and save yourself 40 minutes.
