Mussels in White Wine Sauce and Frites
INGREDIENTS
• 2 kg Mussels (Cleaned and discard opened mussels)
• ½ cup Shallots
• 5 to 6 Cloves Garlic (Minced)
• ½ tsp Red Pepper Flakes
• 1 Roma Tomato (Diced)
• ¼ tsp Fresh or Dried Thyme
• 1 to 1 ½ cup of Chicken Broth
• ½ cup Dry White Wine
• 2 tbsp Parsley
• Salt and Pepper (to taste)
• Lemon
INSTRUCTIONS
• Sauté shallot and garlic in a large pot with 2 tablespoons of oil over medium heat for a minute. Stir to prevent the garlic from turning brown.
• Add red pepper flakes and continue stirring until you smell the fragrance from the chili.
• Add diced tomatoes and thyme, and stir for a minute.
• Season with salt and Pepper.
• Increase the temperature to medium-high heat.
• Add mussels and stir.
• Add wine and chicken broth. Allow the broth to boil.
• Put on the lid and cook for 6 to 8 minutes, or until the mussels open up.
• Turn off the heat, stir, and add chopped parsley.
