10 years I decide to open 44 and but was
a big place we want to make it
Mediterranean because Tapas was in
fashion at time every time I was doing
pasta in V people said to me the Italian
is not French so I decide to open a
restaurant Mediterranean that’s why we
don’t show with French but 80% of us
stuff is French everything is fresh
local products when we can’t but of
course with everything with influence of
like Spanish shizo tap pasta for Italy
and of course so many things for France
like a swine some good classic from Bas
here to soup
and and but the main thing people know I
think it’s a St at a minute and we have
a good mix of Spanish of course but with
a good French and fance and a beautiful
my favorite one is a b cheese
B still was a it was a rest was very
successful we open we were open for 10
years so but I notice at the last two or
three years before the Clos on I
realized everybody was desperate to go
in a city center and uh I said wow and
take us nearly two years to find this
place were so big and after counting all
the penny and break all the pot well we
open 44 6 years ago and uh but on the
time of Mediterranean why because we
want to bring it to pass it’s a street
with so many people who have a drink and
everything they want to bite to eat me
was something for a quick bite to eat
but it can be to the food experience if
his people want it and the idea I said
okay we open to everybody Mediterranean
mean nothing but everything I mean all
the best food come from each is full of
sunshine and we try to recreate that on
your plate when people was coming
now you are in US beer garden 44 beer
garden we are in center of Belfast and
this big place nobody know about it he
was open just after the co and if we
have a sunny summer I like the smile on
the face and but he been re open again
to try to get people going outside and I
open it for you a pizza era and that
will be working every weekend you will
get some nice pizza made by me if not in

day and will be made by me open only on
Friday Saturday and s over all

the Tapas and all the sharing thing we
do like example a small sauce coming
from a Newcastle but is cook in
frenchway and that’s where you get
French and fluence but with the Irish
products wine it’s about uh it’s about a
The Passion of living it’s not about

all the wine we have in 44 it was not
put because oh it’s good value for Mone
because we love the wine all the staff
try the wine because they sell the wine
and we love as wine list I mean we have
a wine list we I think very good I love
always a challenge to people said to me
I don’t like wine because everybody like
wine but they don’t know what wine they
like wine is so beautiful but it’s to
find what you like it and to par adapted
and that’s what we for and that’s what
we try to do in

Belfast passion and passion fruit vodka
a bit of orange juice can sugar lime
juice very simple and so beautiful to
other

minut of lime juice fresh passion fruit
puree beautiful products and that just
passion fruit nothing else on it and now
35 of orange juice that’s it now you
aage so good

I always said I will not be a French
restaurant I’m not a French restaurant
but in France you know to be waiters or
to be a chef is not just a job is a way
of living it’s a it’s a job you
qualified for be a waiters you qualifi
to be a s you qualify to be a chef and
if you think and that’s create a
difference it’s my passion it’s my job
and I’m when I speak I speak with favor
and with enthusiasm because I love my
job and this was on the last note I we
say well you don’t need to get the
sunshine to coming and enjoy your ter
will be open very shortly and you be you
will love to sit down unless we spot
over there to get the sunshine so more
late on afternoon that’s a spot to be
the one over there and coming and enjoy
bit of sunshine with us all over this
summer
