French Onion Soup w/ Rice
Welcome to the first episode of my everything goes better with rice series! My favorite carb of all time is rice and this goes out to all my rice lovers out there. This dish came out surprisingly good! almost had like a risotto vibe to it. I guess what lacks is just some protein and it’s a complete meal!
INGREDIENTS
soup:
– 1kg onions, sliced
– Olive Oil
– Butter
– Salt & pepper to taste
– Red wine
– Beef stock
– Parsley, Bayleaves, Thyme, Rosemary
– arborio rice
other ingredients:
– gruyere cheese
– sourdough bread slice
– garlic
INSTRUCTIONS:
– in a pot on low-med heat, cook onions in butter and olive oil for 40mins-1hr until well caramelized. Add in red wine to deglaze the pan and cook for another 2-3 mins.
– Add in beef stock along with your parsley, bayleaves, thyme and rosemary. Add in arborio rice and allow to cook for another 10-15 mins or until rice is soft enough. season to taste with salt and pepper.
– add into a oven safe container and add a slice of toasted bread on top along with gruyere cheese.
– Bake until cheese is melted and serve!

soup now hear me out this isn’t the
first time you’ve seen soup and rice
together especially in dishes like kji
and Aros Caldo Asian people will know
and it’s no surprise or should I say
soup rice that these two make such a
great combo I cook this like you would
any french onion soup starting by
cooking down a healthy amount of onions
in butter and Italian blood until deep
dark and caramelized Del glazing with
red wine then adding homemade beef stock
good
girl perfume it with bay leaves parsley
Thyme and rosemary and now for the best
part the rice I chose arboro rice
commonly used for dishes like Roto
because of its high starch content that
makes it creamier and it’s really good
for soaking in all that flavor from a
rich broth I topped it off with a
toasted slice of crusty bread crer and
baked until the cheese was melted
honestly I say this was a success I
would give this a 7.5 out of 10 since I
feel like for this to be a complete meal
it needs a bit of protein if I could
make this again I’d probably add like
some cubed beef or something it’s like
kji and french onion sup had a baby
