Search for:



3 cooking onions, sliced – get ‘em into a pan with some oil and cook them low and slow for about 15min. Remove from pan.
1 head broccoli – drizzle with canola oil and season with salt – roast at 375F 15-20min
3 chicken breast, cut in half horizontally – season with salt, fry em in oil. Once cooked remove from pan
Add about 1/2-3/4 cup of water to the pan and use a wooden spoon to scrape off the brown bits.
1/4 cup gig jam – whisk it into the pan
Add the chicken and onions back. Simmer for about 5 min.
Sprinkle with cheese and cover to melt.
Serve with the broccoli
