Ingredients:
1/3 cup plain Greek yogurt
3/4 cup sugar
2 eggs
3/4 cup flour
1/2 cup almond flour
1 1/2 tsp baking powder
1/2 tsp salt
1 tsp almond extract
1 tsp vanilla extract
4 Tbsp oil
1/3 cup sliced toasted almonds
Powdered sugar for dusting.
To toast almonds: Place them in a single layer on a baking sheet in a 350 degree F oven for 5 minutes, halfway through, shake pan and flip almonds. Set aside to cool after they are golden brown.
Glaze:
1/2 cup powdered sugar
1/2 Tbsp milk
1/4 tsp almond extract
1/4 tsp vanilla extract.

Instructions:
In a bowl mix together yogurt, eggs, extracts and oil. Stir to combine
Add in flour, almond flour, baking powder and salt. Mix until dry ingredients are incorporated.
Pour into a greased 6 inch cake pan (line bottom of pan with parchment paper or wax paper).
Bake at 350 degrees for 30-33 minutes.
While baking mix up glaze. Combine all ingredients in a small bowl and stir until smooth.
Remove cake from oven and flip onto a cooling rack.
Brush the sides and top of cake with the glaze.
Sprinkle top with almonds
Dust with powdered sugar

Hi i’m leanne and today we are making a french almond cake now i think it’s reminiscent of those amazing almond croissants you can get in a french bakery it has a nice tender crumb lots of almond flavor it comes together in minutes you only need one bowl and it’s delicious

Join me in the kitchen as we make small batch recipes with big taste All right our first step for this cake is we’re going to toast our almonds now i am using sliced almonds here you could use slivered almonds but i think this likes to almonds look prettier we’re going to put them in a 350 degree oven for about eight to 10 minutes and then

Stir them halfway in between until they get nice and toasty and golden brown we’re going to start by mixing together our wet ingredients and we’re going to start with a third a cup of plain yogurt now i’m using greek yogurt if you’ve got some french yogurt on hand go ahead and

Use that i like to use a whole milk yogurt but you can use a low-fat a non-fat whatever you have we’re going to add in two eggs and then we’ve got a three-fourth of a cup of granulated sugar let me kind of mix that together and then we’re going to use four tablespoons

Of oil now you want a mild flavored oil i am using sunflower oil but you could use vegetable oil or canola oil i don’t recommend olive oil because it has more of a distinct flavor and i also recommend not substituting the oil for butter this oil gives this

Cake an amazing a texture that you don’t want to miss out on all right and then we’re going to add in our extract i have a teaspoon of almond extract again i rarely measure my extract and a teaspoon of vanilla extract we’re going to pop that in and mix that all together

Oh i love the way that almond extract smells we’re ready for our dry ingredients three-fourths of a cup of all-purpose flour and a teaspoon let me double check i’m terrible with measurements and remembering a um for we’re using baking powder yes we’re using a teaspoon and a half of baking powder

All right and then we are using a quarter of a teaspoon of salt then the last ingredient that’s going to go in is we are using a half of a cup of almond flour now i buy my almond flour you can find it in the baking aisle of

The grocery store this is the one i got at trader joe’s there is almond flour and there’s almond meal almond flour is finer so you want almond flour now worst case scenario you cannot find it take some of your almonds grind them up in your blender till they’re nice and fine

And you can use that instead so that will work and then we’re going to mix this up just until all of our dry ingredients are incorporated with our wet ingredients i always like to mix my small batch recipes up by hand just because then you have less of a

Tendency to over mix or overbeat which can cause for tough baked goods all right then we’re going to take our prepared pan i am going to grab a spatula because especially with these small batch recipes you want to get all the ingredients out of the bowl

And pop it in and then we are going to put it into our oven and we are going to bake at 350 degrees fahrenheit for about 30 minutes or until a toothpick comes out clean or the cake bounces back when you touch it well our

Cake is baking we’re going to mix up our glaze because this glaze just like that lemon cake if you missed it check up there don’t miss it this glaze needs to be put on the cake while it is still warm because then that glaze just soaks right into that cake and

Makes it so good so i’ve got a half a cup of powdered sugar in here i’m going to use a half a teaspoon of almond extract and a half of a teaspoon of vanilla extract now if you aren’t an almond fan heaven forbid you could always just make

This cake with vanilla extract but that because almond flavor really doesn’t give it much of an almond flavor um the almond flour they say that yeah almond flour all right now we’re just going to take a little bit of heavy whipping cream half and half milk

Whatever you’ve got on hand and just add enough in until we get the glazing consistency that we want we want it to be runny because we wanted this not to sit on top of the cake but to absorb in to the cake of course if you get too

Much liquid in it go ahead and add in a little bit more powdered sugar nice and runny it’s ready for our cake okay we have got our cake out of the oven and we are going to while it is still warm right out of the oven take it out of the pan

Don’t forget to take off your paper there we go go ahead and brush it over the top and you want it just to soak right in to your cake and i’m going to brush it on the sides and use every last bit of it this is

Going to soak in and then it’s going to kind of create a delicious crystallized sugar coating to the cake All right there we go now we’re going to take those toasted almonds that we made and you could place them very neatly one after another on top of your cake but i just sprinkle them right on there this not only adds elixir a little extra almond flavor to your cake but it gives

It a nice crunch too nice texture to it which i love warm syrup will kind of help them stick on the cake and then we’re going to make it extra fancy i’ve got a little powdered sugar and we are just going to dust the cake

With that and we have got a beautiful a delicious almond cake now if you’ve ever been to france to a french bakery and eaten one of their french or their almond croissants yeah it is a little bit of heaven well this almond cake is right up there with that almond croissant
