    For the rolls:
    70g softened unsalted butter
    50g light brown sugar
    1tbsp cinnamon
    8 slices of bread
    2 medium eggs
    60ml milk
    1tsp vanilla
    Butter for toasting

    For the cinnamon sugar:
    50g granulated sugar
    1tsp cinnamon

    For the icing:
    20g softened unsalted butter
    60g cream cheese, room temperature
    25g icing sugar

    1) Mix together the butter, light brown sugar and cinnamon until combined.

    2) Cut the crusts off the bread slices and roll them flat with a rolling pin.

    3) Spread the cinnamon butter on each slice of bread.

    4) Roll them up tightly.

    5) In another bowl, whisk together the eggs, milk and vanilla until combined.

    6) Dip the rolls in the mix.

    7) Melt some butter in a pan and toast the rolls until golden on each side.

    8) Mix together the granulated sugar and cinnamon in a bowl.

    9) Coat the rolls in the cinnamon sugar.

    10) For the icing mix together the butter, cream cheese and icing sugar until combined.

    11) Pipe the icing over the rolls.

    12) Enjoy!

  3. I have an idea for a recipe I hope you could make: brookie pie!
    How I thought this could work:
    You would make a brownie batter, and have cookie crust ready. You would simply pour the brownie batter into the dough, and fold more cookie dough over that. Would that work out well? I fear it may be a flop…

  4. Healthier version: lightly butter some rolled bread. You can add a bit if Nutella if you like. Roll and dip in milk and egg mix. Cook on medium heat then sprinkle in cinnamon or cinnamon sugar. Kids love it and a Brekky with protein, calcium, carbs and love.
