You don’t really need the butter and bacon grease; that amount of bacon grease is more than fine. I won’t with it though, butter is delicious.
Skip the garlic, or add it right before the flour; looks like it burned
I would use stale or toasted bread (stale is traditional, but honestly this step is mostly just preference)
Provolone is fine; but any type of Swiss is better imo
