Quiche Lorraine:

Ingredients for the dough:

250 g of flour
125 g cold butter (diced)
1 egg yolk
2 tablespoons of cold water
Pinch of salt
Ingredients for the filling:

200 g of bacon or bacon (chopped)
1 medium onion (chopped)
150 g grated Emmental or Gruyère cheese
3 eggs
300 ml of cream
Salt, pepper, nutmeg to taste
Preparation:

To prepare the dough, crumble the flour and cold butter in a bowl. Add the salt, then stir in the egg yolk and cold water. Knead quickly, then chill the dough in the fridge for at least 30 minutes.

Preheat the oven to 180 degrees.

Roll out the dough and line the pie pan with it. Prick the bottom with a fork and bake for 10 minutes.

Meanwhile, prepare the filling. Fry the bacon or bacon in a pan, then add the chopped onion. Continue to cook until the onion softens.

Take the pie form out of the oven, then sprinkle the bacon and onion on it. Sprinkle the grated cheese on top.

Beat the eggs in a bowl, then add the cream. Season with salt, pepper and nutmeg. Pour the egg mixture into the pie pan.
