When I want to cook chicken and make it fancy, then this is my go-to recipe. It’s my version of a French classic, coq au vin, which is basically chicken in wine. By marinating the chicken in red wine long enough (12-24 hours), it turns beautifully purple and flavorful. And when you start frying it, the aroma will make your kitchen smell like a fancy restaurant.
I serve this dish with creamy, buttery mashed potatoes. If you want, you can also make some salad or pair it with another side dish that you like.
