French onion soup (in vintage ’70s bowls with wicker cozies)
The soup? Awesome. The vintage presentation? Priceless.
Ingredients:
-5 yellow onions, thinly sliced
-2 cloves of garlic, minced
-A couple knobs of butter (for frying)
-1L (4 cups) chicken broth
-1L (4 cups) beef broth
-125mL (1/2 cup) red wine
-Splash of balsamic vinegar
-Dash of sugar
-1 tbsp Worcestershire sauce
-A big sprig of Thyme
-A couple of bay leaves
-Salt and pepper to taste
-Plenty of shredded mozzaralla
-200g (1 1/2 cups) shredded Gruyère
-100g (3/4 cup) shredded mozzarella
-20g (4 tbsp) shredded Parmesan
-Thickly sliced French bread (optional: brush both sides with olive oil)
Method:
1. Melt the butter in a large pot on medium heat and then fry the onions for about 10 minutes, stirring frequently.
2. Lower the heat and add a dash of salt and a slightly bigger dash of sugar. Let simmer for 20 minutes, stirring occasionally, until onions are caramelized.
3. Add garlic and cook two minutes more.
4. Add the red wine and give the sides/bottom a good scrape. Then add the beef broth, chicken broth, Worcestershire sauce, thyme, bay leaves, balsamic vinegar, and a little more salt and pepper to taste. Let simmer 15 minutes, then remove the herbs.
5. Meanwhile, set your oven to broil. Slice the bread, brush with olive oil, arrange on a baking sheet, and slide it onto the top rack to toast. Wait a minute, then flip the bread and toast the other side for a minute. Set aside. You can also grate your cheeses and set them aside.
6. Ladle the soup into four French onion soup bowls. Place the toasted bread on top of each bowl, then sprinkle on the Gruyère, mozzarella, and finally the Parmesan. Place the bowls on the top rack of your oven and broil for around two minutes, until cheese is bubbly. Let cool a couple minutes and serve.

Need to caramelize the onions add and remove herbs for flavor and fragrance toast some bread under the broiler and grate a few different types of melty cheese it does take a while but it’s pretty much the best soup around and then you get to put it in a bowl
With a handle how fun is that it’s almost like a toy the real magic here though are the Wicker cozies that’s what grabbed my wife’s eye in the thrift store and convinced her to part with a 10 spot they’re basically a ticket straight to the 70s just missing a shag
