INGREDIENTS:
2 eggs
22g unsalted butter
10g low-gluten flour
80ml milk
30g sugar
1 tsp vanilla extract
1 tsp powdered sugar

PRO TIPS:
– Don’t skip coating the mugs, as this is one of the most important steps. If you do, the batter may stick and the soufflé won’t rise properly
– The baking time is different for different sizes of molds but should not be too long. If overbaked, the fluffy and moist texture will disappear and it will look like a cake
– Soufflés need to be served immediately because they rise so much in the oven and when a hot soufflé hits the cooler air, it deflates

Today, we’re going to be making a classic French dessert – the Vanilla Souffle. This dessert is light and airy and full of vanilla flavor. Using a pastry brush, grease 2 oven proof mugs with butter. By making upward strokes will encourage the soufflés to rise upwards.

Then coat the bottom and sides of the mugs with sugar. Discard any excess. Separate 2 egg whites from the yolks. Melt 22g unsalted butter in a saucepan on low heat. Add 10g low-gluten flour. 80ml of milk and mix well. Add the 2 egg yolks into the mixture.

Keep mixing until a smooth mixture is obtained and add 1 teaspoon vanilla extract. Beat the egg whites until the mixture becomes foamy. Gradually add 30g sugar in 3 times. Continuemixing until stiff peaks form. Add 1/3 of the egg white into the egg yolk mixture and gently fold.

Return the batter into the egg white mixture and gently fold till everything is combined. Divide the batte between the prepared mugs. Bake in a preheated oven at 200 degrees for 13 minutes. Dust with some powdered sugar and your vanilla souffle is ready to be served!
