French Onion Phyllo Cups

Ingredients:

-1 onion
-1 tablespoon olive oil
-1 tablespoon butter
-½ tsp each: salt, black pepper, dried thyme
-Defrosted mini phyllo shells
-½ cup freshly grated parmesan cheese
-1 cup shredded mozzarella or gruyere
-Garnish: parsley

Directions:
Slice a yellow onion.
Heat olive oil and butter in a skillet on medium low.
Cook onion down until caramelized with salt, pepper and dried thyme. This should take about 30-40 minutes, stirring occasionally.
Preheat the oven to 350 degrees Fahrenheit. Grease a mini muffin tin with nonstick spray.
Add phyllo shells to the mini muffin tin wells.
Grate parmesan cheese.
Add parmesan, then onions, then mozzarella/gruyere and then parsley.
Bake 7-10 minutes or until cheese is melted.
