Epic French Onion Soup in a Bread Bowl!

Ingredients:
6 large red onions
4 tablespoons butter
4 tablespoons extra virgin olive oil
1 teaspoon of brown sugar
Kosher salt – to taste
4 cloves garlic, minced
8 cups stock ( beef or chicken )
1/2 cup white or red dry wine
2 bay leaves
1/2 teaspoon dried thyme
1/2 teaspoon freshly ground black pepper
¼ cup tablespoons brandy (optional)

1 1/2 cups grated Gruyere cheese
Sprinkling grated Parmesan cheese

Now let’s get cookin’!
Peel and slice those onions like you’re Picasso with a knife. Mince that garlic like a pro!
Heat up that olive oil and toss in those onions in the olive. Cook ’em low and slow until they’re feeling soft and tender (about 20 minutes). Add more olive oil and butter for that extra love and cook for about 40 more min.
Time to sprinkle the sugar, salt, pepper, and throw in the garlic for a flavor explosion! Cook until those onions are golden and glorious (about 10-15 minutes more).
Pour in the wine, scrape up all the flavor from the bottom of the pot. Add in the stock, bay leaves, and thyme for the ultimate flavor party. Let it simmer for about 30 minutes.
Taste test time! Season to your heart’s content.
Let’s make this a bread bowl! Cut out the top, slice it into cubes, and sprinkle Gruyere cheese inside the bowl. Broil for 3 minutes and let the magic happen.
Pour in that delicious soup, top it with more cheese and bread cubes. Back under the broiler for another 3 minutes of perfection.
Garnish with scallions and Voilà!
