Passionfruit & Vanilla 75

Douglas Ankrah, the inventor of the Pornstar Martini said one of the things that inspired him to make the cocktail was flavours from baking. I took the passionfruit and vanilla combo and put it in a French 75 twist, with the biscuity/brioche notes of a traditional method sparkling wine pairing rather well.

Clearly I have lots of passionfruit purée to use up. Which I’m very pleased about. A misconception I’ve been seeing since posting the OG PSM is that passionfruit purée is sweet, when it is actually rather tart (most brands and locations anyway) while providing a small amount of sugar.

For traditional method go for: Champagne, Cava, many British sparkling wines, Crèmant etc.

I’d recommend a fruity or a spicy gin for this one.

25ml Gin
15ml Passionfruit purée
7.5ml Vanilla syrup
Top traditional method sparkling wine
Passionfruit garnish
