– 2 lbs Chicken Thighs & Legs (Dark Meat)
– Salt
– 4 Shallots OR 1 Medium Onion, Diced
– 1 Celery Rib, Diced
– 4-5 Thyme Sprigs
– 2 Cloves Garlic, Minced
– 6 Strips Bacon, Chopped
– 2 Tbsp Dry White Wine OR Brandy or Whisky
– 2 Tbsp Flour
– 1/3 Cup Chicken Stock
– 1 1/2 Cup Hard Dry Apple Cider
– 2 Apples, Peeled & Cored into Wedges
– 1 Cup Heavy Cream (More If Extra Sauce Is Desired)
