INGREDIENTS
2 eggplants
3 tbsp olive oil
8 garlic cloves
1 lemon juice
80 g feta
1 tbsp cumin
basil

INSTRUCTIONS
Preheat oven at 220°C.
Cut eggplant in four and lay them on a tray with peeled garlic cloves.
Drizzle some olive oil and sprinkle some salt on top, bake for 25 minutes.
Collect the flesh with a fork and smash the cooked garlic, let everything cool in a bowl.
Add cumin, lemon juice, feta cheese and mix.
Salt and pepper to taste.
Finish with chiseled basil on top.
