Ingredients:
1 cup chopped onion
1 cup finely diced bell pepper, Broccoli
1/2 cup thinly sliced celery
1/2 cup chopped parsley
2 cloves garlic, minced
1 1/2 cups uncooked long-grain rice
1 3/4 cups fat-free low-sodium veg or chicken broth
1 cup water
1/2 cup white wine
1 tablespoon chopped fresh thyme or 1 teaspoon dried thyme leaves
salt, to taste
Step by Step Method
Step 1
Heat 2 tbsp olive oil or butter in a large saucepan saute add onion, garlic, celery, thyme sprigs until done.
Step 2
add rice and cook, stirring constantly, until rice is light transparent
Step 3
Do not burn rice.
Step 4
Stir in wine and reduce then add veg or chicken broth, water, salt and pepper to taste.
Step 5
Bring mixture to a boil, then reduce heat and simmer, covered, for 15-20 minutes or until liquid is absorbed and rice is tender.
Step 6
When rice is 80-90% cooked add bell pepper, broccoli and parsley and then cover for 4-5 mins until pilaf is done.
Fluff with fork before serving.
