Every guest who enters the stylish Spanish room reception lounge is awed by an impressive art installation called “Las Paginas de la Historias” or “Pages of History” that tells the Admiral Hotel’s stories of existence to life.
The colorful stained glass art ceiling tells a story that showcases the everyday life and distinguishing mark of our Filipino culture, called Bayanihan Spirit, loved for festivals and celebrations through music, songs, and folk dances.
The lounge is richly decorated with art deco design in a cozy Filipino-Spanish ambiance at its elegance with a priceless- historical book on a coffee table and an antique celestial globe displayed as a centerpiece.
Located on the 9th floor is the Admiral Club Manila Bay, the hotel’s unique dining destination, where you will be welcome to a wall that doubles as a see-through ultra-modern glass wine cellar.
What livens the rooftop dining area is the panoramic view of the stunning Manila Bay canvas through its floor-to-ceiling glass window walls that enchants every diner at a catwalk table that spices their fine dining experience.
Taking inspiration most from The Admiral’s travels, diners are treated to the chef’s passionately curated cuisines of Filipino, Spanish, French, and Asian Flavors.
As our famous National Hero, Dr. Jose Rizal, once said, “The appetite is sharpened by the first bites.”
The first bites are considered starters or Tapas that originated in Spain and are dishes served hot or cold in small earthenware bowls to whet the appetite for the heavy meal ahead.
The Salad Bar comes with salad appetizers of Tuna Tataki and the simple Italian favorite, Salad Caprese.
But with so many fresh salad ingredients to choose from, by request, the chef can make you a Caesar’s Salad paired well with the Quattro Formaggi Pizza.
Among the Spanish-heritage menu specialties we feasted on adapted to Filipino tastes are Seafood Paella, Jamon de Pina, a Spanish-style cooked ham, Spanish Baked Salmon, Rabo de Toro, an oxtail stew cooked in red wine until tender and flavorful, and our family’s favorite beef tripe stew called, Callos.
Featuring a collection of Asian Delights at the Asian Kitchen, Filipino favorites are Tuna Sisig and Lechon Paksiw, baskets of steamed dim sum, some creative selections of maki and nigiri sushi, fresh sashimi, assorted Japanese starters and authentic noodles with choices of flavorful broth like Laksa.
While carrying on an uninterrupted conversation, diners can indulge in some favorites that are best to nibble on, like dried-candied fruits, toasted nuts, a wide array of cheese, and different cold cuts with freshly cut pieces of bread and assorted spreads, and the French Pizza, Pepperoni Fougasse.
Desserts are great meal-enders that are impossible to resist. Seasonal fruits are always a welcome healthy treat for a dessert. But we can not let go to indulge in the classics at the Gallery of L’ATELIER DES DESSERTS.
Since it is not an everyday occurrence, we feasted on the full flavor of Croissant Bread Pudding, rich in butter, cinnamon, and savory pudding with vanilla sauce, for the perfect finishing touch.
Other classic favorites that richly satisfy our palates are Creme Brulee and silky-smooth-cooked cream called Mango Panna Cotta.
Great additions to the sweet collections are Wild Blueberry Mousse, Mini Fruit Pavlovas, Blueberry Cheesecake, Chocolate Tarts, Toasted Mixed Nuts, and Pear with Almond Tarts. These are great accompaniments to the 16 colorful and delightful flavors of ice cream at the ice cream spinning wheel and to the richness of the chocolate sauce at the chocolate fountain.
