flour – to coat brisket before searing
carrot, onion, celery, mushroom, garlic – all for sauce flavor
thyme, rosemary, bay leaves – additional sauce flavour
tomato paste – any brand as long as the ingredients are only tomatoes – NO CITRIC ACID
red wine – use a full bodied dark red wine, sauce should have a very deep rich flavor
