FANCY FRENCH FOOD FAST 🔥⚡️💋
One of my favorite French dishes – and one of the first things I learned to make in cooking school – comes together in a flash and feels so fancy – but it’s secretly so simple.

Moules et frites. Mind blowing my simple and delish.

Except we’re swapping out potatoes for butternut squash zigzags from @traderjoes and crisping them up with garlic and parsley in the air fryer. Since I couldn’t decide on one sauce, we’re making two. Simple enough where you can do both at the same time.

Chef tip: clean the mussels very well and steam or boil them first to get rid of any debris or fishiness then once they’re opened – which only takes about 3 minutes, pop them into the sauce. From start to finish, you’re in it for about 15 minutes. Quick gourmet is tres fantastique! And mussels are full of protein – about 20g per 3 oz of mussels. 💪🏾💪🏾

Tomato broth

2 tablespoons extra virgin olive oil
1/4 cup shallot, chopped fine
3 cloves garlic, minced
1 1/2 tablespoons chopped fresh parsley
2 cups tomato sauce
1/4 teaspoon dried tarragon
1/4 teaspoon dried red-pepper flakes
Pinch of fresh-ground black pepper and sea salt

Garlic broth
1/2 cup dry white wine (I used Chablis)
2 tablespoons butter
1/4 cup minced shallots
4 garlic cloves, minced
1/4 cup minced parsley
Pinch of white pepper and sea salt

2 pounds of mussels, scrubbed and debearded
