🧑‍🍳 INGREDIENTS:

For the Dressing:
• 15g egg yolk (one)
• 10g dijon mustard (1tsp)
• 20g rice wine vinegar
• 10g white soy
• 1 pinch white pepper, finely ground
• 55g grapeseed oil

For the Salad:
• 1 whole butter lettuce
• 1 whole shallot, soaked in lemon juice
• 1 bunch of radishes

🧑‍🍳 METHOD:

Dressing Method:
• Whip egg yolk and mustard until light and airy.
• Stream in grapeseed oil while whisking to emulsify.
• Season with vinegar, soy, and pepper.

Salad Method:
• Rinse butter lettuce, peel, slice, and soak shallots in lemon
• Arrange the lettuce whole and let shallots fall into and around the lettuce.
• Wash radishes and thinly slice then distribute them across lettuce.
• Drizzle a little extra dressing all over the salad to finish.
