Garlic Soup – New Orleans Style
2 lbs. onion, peeled and roughly chopped (3 large onions)
2 cups garlic cloves, peeled and chopped (about 10 oz, 50 cloves)
2 Tbs. olive oil
2 Tbs. butter
1 1/2 quarts (6 cups) chicken broth
1 bouquet garni (parsley stems, thyme sprigs and bay leaf)
2 cups stale French Bread, cut into 1/2-inch pieces
1 cup half-and-half
2-3 tsp white wine vinegar (to taste)
Kosher Salt
White pepper
