For the Boeuf bourguignon:
1 kilo of beef (chuck roast)
750 grams of carrots
1 big yellow onion
150 grams of lardons or bacon
150 grams of mushrooms
10 pearl onions
2 tablespoons of flour
2 tablespoon of butter
Salt, pepper
Bay leaves
peppercorns and cloves
4 cloves of garlic
1 bouquet garni (herbs)
1 bottle (75 cl) of a strong red wine (preferably bourgogne or bordeaux)
75 cl of beef stock
For the salad:
1 green leaf lettuce
1 or 2 Belgian endives
1 slice of goat cheese
baguettes slices
Vinaigrette
¼ cup of walnuts
For the cheese course:
Any cheeses you like! We used Tomme de Savoie and whole wheat bread
For the crumble:
4 medium red apples
2 oranges
150 grams of fresh cranberries
Candied oranges
1 cinnamon stick
120 grams of sugar + ¼ cup to cook the fruits
1 teaspoon of cinnamon
175 grams of butter
200 grams of flour
