Sydney’s inner-west suburb of Glebe has a new fine dining restaurant specialising in French Japanese cuisine. Opened by Bing Liu and his partner, this is an intimate, sensory experience.
Carte draws its name from the French word for “menu”, and is a 16-seater venue. From the moment you step inside, you are immersed in a world of art. Adorning the walls is a private collection featuring paintings from renowned artists including Guan Wei and Jiawei Shen.
Carte pairs fine dining with curated art. The detailing, from interior decor to the soft and enchanting French lullabies accompanying dinner service, is incredible.
On your table, a poem keeps you guessing which dish is next on its degustation menu. When the food elegantly arrives, the waiter shares about the dish, including interesting facts about the ingredients used and the technique employed.
Seafood is prominently featured, with the WA Marron and grilled toothfish tasting light and heavenly. The sweet corn espuma is presented in a half-cut egg shell and topped with Osetra Caviar. The bite is a moment to savour for a long time.
