Delicious homemade French onion soup. Super simple, ours is gluten free.

Recipe: (4-6 servings) 3 large yellow onions, 2 tbs butter, 1 tbs olive oil, 1 bay leaf, salt/pepper/thyme,1/2-1 cup red or white wine, 1-2 full boxes of beef or chicken stock, bread & Gruyère cheese.

Caramelize the sliced onions in butter & olive oil. Do not salt until they are caramelized.

Add the red wine, broth, seasonings & bring to a boil. Put on a lid & lower to simmer. Simmer for at least 30 minutes.

Meanwhile toast your bread. I coated the bread in olive oil & toasted in an oven at 450 for 10 minutes or until toasty.

Pour into oven safe cups, top with bread & shredded Gruyère cheese. Broil at 500 degrees for 1-2 minutes, until the cheese is melty.

IF you don’t have oven safe bowls, add the cheese to the bread & bake until melted. Add the cheesy bread to the top of your soup.
