My dad has been operating this cater business for decades now. We have had some great opportunities and so fun experiences. However, nights like this are the best. We got pushed out of our comfort zone and made things we have not made before. This couple my dad has worked with for years wanted to give their guests a Parisian dining experience. This group had all taken a trip to France together years before so they wanted to make this dinner night special. My dad and I were so happy to be a part of the evening. In the group of eight, there was one vegetarian guest that I made a different menu for. Their vegetarian menu was so fun to create and to cook! Here is what everyone had:
Hors d’oeuvres: Truffle Mousse & Grilled Plum Slice on Baguette
Amuse Bouche: Grilled Lamb Chop with Herbs de Provence
Appetizer: Three Onion Soup (Sauvignon Blanc Cream, Cippolini Onions, Leeks, and Visalia Onions)
Fish Course: Broiled Gulf Grouper with Lobster Butter & Brussel Sprouts
Beef Course: Sliced Roulade of Beef Tenderloin Stuffed with Caramelized Shallots, Chanterelle Mushrooms, Artichokes with Bordeaux Demi
Salad and Cheese: Bibb & Baby Romaine with Honey Lemon Vinaigrette, Roquefort, Double Creme Brie, and Camembert
Dessert: Mixed Berries, Romanoff (strawberries, Blackberries, Raspberries Marinated in Gran Marnier with Fresh Whip Cream and Crumbled Meringue)
Vegetarian Menu:
Hors d’oeuvres: Same as above
Amuse Bouche: Caramelized Shallot and Mushroom Tart Tatin
Appetizer: Same as above
Course 3: Ratatouille Niçoise with Orzo
Course 4: Coq Au Vin with King Trumpet Mushrooms
Salad and Cheese: Same as above
Dessert: Same as above
