Protein Blueberry Stuffed French Toast 🫐

This is one of the best French toasts I’ve ever had!
INGREDIENTS:
Bread:
4 slices low carb bread – I used the artisan Royo Bread (the BEST low carb bread ever!!) 🚨 Code KATIE10 for 10% off! Link in bio.
French toast mixture:
1 large egg
30 grams vanilla protein powder – I used the Prozis natural vanilla whey isolate – 🚨 Code KATIE10 for 10% off! Link in bio
1/2 cup unsweetened vanilla almond milk
1 tsp vanilla extract
1 tsp cinnamon
¼ tsp nutmeg
For the blueberry syrup:
1 cup frozen blueberries
1 tbsp sugar free syrup, plus more to top (optional)
For the filling:
3 tbsp cream cheese
1 tbsp confectioners swerve, or sugar substitute of choice.
INSTRUCTIONS:
1. In a small pot, add the frozen blueberries and sugar free syrup over medium heat. Smash about half the blueberries to make your sauce. Turn off the heat and set aside.
2. Mix together the cream cheese and confectioners swerve in a small bowl and set aside.
3. Preheat a large skillet or griddle with a little bit of butter or nonstick spray over medium heat.
4. Whisk all ingredients together for the French roast mixture in a medium mixing bowl. Drench each slice of bread generously in the protein egg mixture.
5. Place each slice in your preheated skillet and cook for about 3 minutes on each side. Set the French toast on a plate.
6. Add half of the cream cheese & 1/4 of the blueberry syrup in between two pieces of the French toast. Repeat for the other two slices.
7. Top the French toast with the remaining blueberry syrup and enjoy!
