What’s going on in the sleepy suburb of Constantia?
👴🏼 The drinking/cellaring advice on this bottle was written in 2005. It said “ready for immediate consumption, but has good maturation potential”. SEVENteen years later, it is still kicking, and gives us a lovely glimpse into the journey that Shiraz can take over two decades.
🍇 All estate fruit from Groot Constantia in the stand-alone ward of Constantia, in Cape Town. The vineyards are in a fairly steep valley on the Eastern flank of Table Mountain – one of South Africa’s cooler wine producing zones.
🔬 Grapes were harvested at 24-25 balling. Fermented in open tanks, and matured in French oak barrels for 12 months; 40% new barrels, with 30% second-fill and 30% third-fill.
