Saint Jacques Scallops bacon wrapped, Deglaze with Hard cider and Maple Syrup
Pecten maximus, common names the great scallop, king scallop, St James shell or escallop, is a northeast Atlantic species of scallop, an edible saltwater clam, a marine bivalve mollusc in the family Pectinidae. This is the type species of the genus. This species may be nonspecific with Pecten jacobaeus, the pilgrim’s scallop, which has a much more restricted distribution.
Ingredients:
4 Scallops per person
250 gr bacon strips
1 glass of hard cider
1 or 2 tbsp maple syrup
A few branches of cilantro
A few branches of parsley
1 tbsp lemon zest
Black pepper mill (optional)
